Mom would make these delicious chocolate covered cherries around Christmas each year. The cherries can be left out if you wish.
4 1/2 cups confectioners sugar
2/3 cup (1 can) sweetened condensed milk
1/2 cup (1 stick) butter; melted
2 cups pecans; finely chopped
2 cups grated coconut
Maraschino cherries
(Optional) Add a little rum or brandy to the cherries and let them sit in refrigerator overnight before making candy.
Melt butter slowly and add milk. Stir in powdered sugar, pecans, and coconut. Chill until easy to handle. Roll into marble sized balls. If adding cherries, form ball around a cherry. Chill.
1 package of chocolate chips (milk or semi-sweet)
1/4 block of paraffin wax
Melt chocolate chips and paraffin in double boiler over boiling water.
With a toothpick, dip chilled candy balls into chocolate and place on waxed paper to cool.
