Cauliflower Stuffing


We never had stuffing on Thanksgiving, we had southern-style cornbread dressing and it is really delicious. But this low-carb recipe for stuffing was tried once and it was very popular. It’s a nice way to save a few calories at Thanksgiving dinner.


Ingredients

4 Tbsp. butter

1 onion, chopped

2 cups diced butternut squash

2 celery stalks, chopped or thinly sliced

1 small head cauliflower, chopped or riced

1 cup chopped mushrooms (optional)

1 tsp. kosher salt

1/2 tsp. ground black pepper

1 Tbsp. poultry seasoning

1/4 cup dried parsley flakes

1/2 cup vegetable or chicken broth

Directions

  • In a large skillet or pot over medium heat, melt butter. Add onion, squash, and celery and sauté until soft, 7 to 8 minutes.
  • Add cauliflower and mushrooms and stir in salt, pepper, and poultry seasoning. Cook until tender, 8 to 10 minutes.
  • Add parsley flakes, stir until combined, then pour in broth and cover with a lid. Keep covered and cook until totally tender and liquid is absorbed, about 15 minutes.
  • Serve.
